Easy Breezy Cannoli Cake
1 regular cake mix {any flavor will work, we used "yellow"}
1 lb. ricotta cheese
3/4 c. sugar
3 eggs
1 tsp. vanilla
a couple handfuls of semi-sweet chocolate chips

Make box cake mix according to instructions. Grease only bottom of 9x13x2 inch pan. No flour. Combine ricotta cheese, sugar, eggs, and vanilla. Beat slowly until very smooth. Pour over cake batter gently. It will sink to bottom while baking. Bake 45-60 minutes at 350 degrees. When cool, frost with {this vanilla cream frosting}. Roughly chop chocolate chips and sprinkle on top.
This cake is also very yummy with some crushed Vanilla Spice Walnuts + fresh strawberries sprinkled on top. I'll have to get the recipe for the walnuts from my other mother, Melissa. Stay tuned. :o)

Hi: This cake looks super easy & sounds delicious. Is the sugar for the cannoli cake regular sugar or is it powdered confectioner's sugar? Thanks!
ReplyDeleteThis is a great recipe. The heavy ricotta seems to work best with cakes. The chocolate chips make the cake, thanks.
