NEED {A Memorable 1st KitchenAid Project}

Now that we have our gorgeous KitchenAid mixer prominently displayed on our kitchen counter, I feel obligated to make something fancy!

I'm thinking this recipe for Violet Macarons with Violet & Vanilla Buttercream would be a fun (and challenging!) first project...

Talk about CUTE, right? Evan & I had the most delicious pistachio macarons on our honeymoon in Paris, so how fun would it be to surprise him with a recreation of this yummy French dessert?

Will I be able to give the macarons a stick-to-your-teeth shell like the ones we had in Montemarte? Wish me luck!

Violet Macarons With Violet And Vanilla Bean Buttercream Recipe:
(Thanks Tartelette!)

Makes between 30 to 40 macarons

For the macarons shells:
90 gr egg whites (about 3)
30 gr granulated sugar
200 gr powdered sugar
110 gr almonds
2 tablespoons crushed violet sugar or candied violet petals

For the whites: the day before (24hrs), separate your eggs and store the whites at room temperature in a covered container. If you want to use 48hrs (or more) egg whites, you can store them in the fridge.
In a stand mixer fitted with the whisk attachment, whip the egg whites to a foam, gradually add the sugar until you obtain a glossy meringue. Do not overbeat your meringue or it will be too dry. Combine the almonds and powdered sugar in a food processor and give them a good pulse until the nuts are finely ground. Add them to the meringue, give it a quick fold to break some of the air and then fold the mass carefully until you obtain a batter that flows like lava or a thick ribbon. Give quick strokes at first to break the mass and slow down. The whole process should not take more than 50 strokes. Test a small amount on a plate: if the tops flattens on its own you are good to go. If there is a small beak, give the batter a couple of turns.
Fill a pastry bag fitted with a plain tip (Ateco #807 or #809) with the batter and pipe small rounds (1.5 inches in diameter) onto parchment paper or silicone mats lined baking sheets. Sprinkle with the crushed sugar or violet petals. Preheat the oven to 280F. Let the macarons sit out for 30 minutes to an hour to harden their shells a bit and bake for 15 to 20 minutes, depending on their size. Let cool. If you have trouble removing the shells, pour a couple of drops of water under the parchment paper while the sheet is still a bit warm and the macarons will lift up more easily do to the moisture. Don't let them sit there in it too long or they will become soggy. Once baked and if you are not using them right away, store them in an airtight container out of the fridge for a couple of days or in the freezer. To fill: pipe or spoon about 1 big tablespoon of butterceam in the center of one shell and top with another one.

Violet and Vanilla Buttercream:
1/2 cup (100gr) sugar
2 large egg whites
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 tablespoon violet sugar +1 tablespoon water (or 2 tablespoons violet liqueur)
1 vanilla bean, split open and seeded

Put the sugar and egg whites in a large heatproof bowl over a saucepan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 3 minutes. The sugar should be dissolved, and the mixture will look like marshmallow cream. Pour the mixture into the bowl of a stand mixer fitted with the whisk attachment and beat the meringue on medium speed until it cools and forms a thick shiny meringue, about 5 minutes. Switch to the paddle attachment and add the butter, one tablespoon at a time, beating until smooth. Once all the butter is in, beat in the buttercream on medium-high speed until it is thick and very smooth, 6-10 minutes. Divided the buttercream in two portions.
For the violet buttercream: microwave the violet sugar and water for 30 to 45 seconds. Let cool completely before folding it into the buttercream. If using liqueur, just fold it in the buttercream.
For the vanilla buttercream: add the seeds from the vanilla bean to the buttercream and fold with a spatula until fully incorporated. If not using right away, refrigerate for up to a week or freeze for up to 1 month.

NEED {a beach day}

...so I can spend hours reading a magical book on my big, soft beach towel... so I can let my toes sink into the wet sand at the edge of the gorgeous, clean, blue ocean when I get too warm from the Southern California sun. How nice does that sound?

(Thanks, Ffffound!)

NEED {film for our polariod camera}

Is there anything more entertaining than documenting random summer happenings with an old Polaroid camera?

(Thanks, Ffffound)

LOVE {etsy seller "lakeillustration"}

I am in LOVE with the Etsy store "lakeillustration," run by artist Oliver Lake. His prints are so interesting and, for one-of-a-kinds at $18-20 each, everyone can afford at least one!

A few of my favorites:

"Truth is Rarely Pure and Never Simple," $20

"Back in the Good Old World" Limited Edition Art Print, $19

Oliver also has a ton of music- and film-related prints, so head over to his Etsy shop, lakeillustration, and look around a bit!

NEED {to end discrimination}

Did you know that the military is still discharging soldiers who are gay and want to serve their country?

One of these soldiers is California's Lt. Dan Choi -- an Iraq War veteran and Arabic linguist. Lt. Choi is fighting the discharge and fighting the discriminatory "Don't Ask, Don't Tell" policy. And he needs our help as soon as possible.

Lt. Choi goes on trial on Tuesday. I just signed a letter of support via the Courage Campaign for Lt. Choi, which he will bring with him to his trial. With just a few hours left before Lt. Choi's trial, more than 90,000 people have also signed on to the letter.

It's important that Lt. Choi walks into the courtroom holding as many signatures of support as possible for his fight to continue serving his country, no matter who he loves.

Will you join me in signing and urge your friends to do the same before Tuesday's trial?:

NEED {a good grout cleaner}

Evan and I are on the hunt for a good, non-toxic grout cleaner. Any suggestions?

I am going to try this recipe for grout, tile, and soap scum cleaner, from Mrs. Clean, on our kitchen tile this weekend:

* 1/2 cup of baking soda
* 1/3 cup of ammonia
* 1/4 cup of white vinegar
* 7 cups of water

Combine all the ingredients in a spray bottle and shake well to mix. Do not use this in conjunction with chlorine bleach or where chlorine bleach has been used. (Never mix ammonia and bleach containing products.) Simply spray it on and then wipe with a damp sponge or cloth. No rinsing required.

Wish me luck!

LOVE {travel journals}

One of the best decisions I've made in a long time is to keep daily travel journals. I started journaling back in October of 2008, when I chronicled each day of our two-week Thailand trip. Conveniently, it just so happened to be the trip Evan proposed to me on. It's great to read through the days before and re-realize how utterly clueless I was that he was about to ask. Must have been the jet lag!

Our trips are so filled with action and adventure that it's tough to remember evvvvverything. I'm finding that journals are the perfect way to capture all of those lovely little details- names of great restaurants, amazing people we meet along the way, the beautiful, unexpected sights- that we would surely forget over time.

I LOVE these travel journals:

"The Journey Journal - Europe Edition," $12

From Cracked Designs' @ Etsy

"Airlplanes & Suitcases" Travel Journal, $8

From Afiori's shop @ Etsy

"Upcycled" Exotic Travel Journal, $18

(Note to self: Figure out what "upcycled" means!)

From Becky Design's @ Etsy

Now we just need to plan another trip so that I actually NEED one of these!

NEED {a michael jackson tribute playlist}

In memory of Michael Jackson, I NEED to make a classic MJ playlist.

I'm thinking...
.Beat It
.Black or White
.Thriller
.I'll Be There (Jackson 5?)
.Billie Jean
.Rock With You
.Wanna Be Startin' Somethin'
.Smooth Criminal
.Human Nature

What kid of the 80s doesn't remember the first time he or she saw the "Thriller" video? Or that Michael Jackson show they had at Disneyland? Oh Michael, a piece of my childhood will be laid to rest with you. <3

WANT {our wedding DVD}

Like a little child, I LOVE getting packages in the mail. Is there anything more exciting that when the UPS man knocks on your door with a lovely brown box filled with, well, anything?

Our wedding videographer, Leon Costello, shipped the final cut of our wedding DVD last week. Talk about the best package EVER! We had the most lovely wedding in Ireland on April 4th. The weather was perfect, the birds chirped loudly for us, and we made memories that will last a lifetime. The Irish Post Office didn't give Leon any tracking information, so each trip to our mailbox is wrought with excitement and anticipation.

To hold us over until the DVDs arrive, Leon posted a short little snippet of the highlights from our wedding day on Vimeo. Isn't he talented?

NEED {pots & pans}

As newlyweds, the husband (Evan) and I have been contemplating what we NEED to spend our Crate & Barrel gift cards on.

We NEED:

Pots & Pans...

We WANT:

Calphalon's Contemporary Non-Stick Cookware, $399.95

Isn't it amazing how appealing nice cookware get as we get older? Love it!
